What I found striking about the 1996 Vin de Paille was that the nose was identical to white truffles, something I had had my share of a week earlier when I was in Piedmont.
All of Chapoutier's 1996 white wines were made from small yields, and all possess more acidity than normal, but they are generally dominated by their respective terroirs. Chapoutier's 1995 and 1996 Hermitage Vin de Paille (2,500 half-bottles were produced in each vintage) are extraordinary, nectar-like wines. They exhibit an orange marmalade, honeyed corn, super-sweet richness that is almost too intense to have with dessert. The 1996 possesses slightly better acidity; the 1995 is a heavier, fatter wine. These wines will last 50+ years.
