The first Limited Reserve Cabernet Sauvignon, the 1991, is a knock-out effort. Although Silverado has a tendency to take great raw materials and add excessive acidity in the winemaking process, that did not happen with this marvelously rich, natural tasting Cabernet. The wine possesses an opaque purple color, a big, sweet nose of cassis and new oak, and full-bodied, concentrated, well-balanced flavors with a harmonious integration of wood, acidity, alcohol, and tannin. Although still young and unevolved, this wine promises to last and improve for 12-15+ years.
Deep, rich and focused, with herb-laced currant, black cherry and plummy fruit. Tightens up and turns richly tannic on the finish, with a touch of pencil lead. Has the balance and concentration for further cellaring.
