Tasting Notes

The 2018 Fósil San Pablo is a Chardonnay from San Pablo, but as with the Aluvional range, it’s more specific than just San Pablo; it’s from the Estancia San Pablo zone from two plots within their estate vineyards, cooler and closer to the mountains. It has plenty of notes of salvia, oregano and wild herbs, balsamic and with a medicinal touch. 2018 saw a late harvest, but the wine always keeps moderate alcohol. The clusters were pressed directly, and it fermented in a concrete egg and two used 500-liter oak barrels with indigenous yeasts, then bottled without malolactic after six months. The first vintage was in 2016, and it feels like the wine has been gaining precision and focus, quite transparent to the place. 4,000 bottles produced. It was bottled in late 2018.
