This is the dry white wine of Château Margaux, made from 100% Sauvignon Blanc in 11 hectares of vines. Less than 1,000 cases are produced annually. Recently the bottle has changed to dark glass in order to aid the ageing and stability of the wine and diam corks have been used since 2017. Since 2022 there has been a second wine produced (which is not sold en primeur).
45% of the crop will make it to Pavillon Blanc in 2025. 45% will go into the second wine. Ageing in 25% new oak and 50% in larger demi-muids. It will be bottled in June 2026 with Diam 30 corks. Yield just 16 hl/ha. 14% ABV. Production will be only 600 dozen (half of last year)


The 2025 Pavillon Blanc, which incidentally has existed since the 19th century, when they opted to separate the complanté white varieties, was picked between August 18 and 22 at 16 hl/ha. It underwent less bâtonnage this year. It has an attractive bouquet with lifted orchard fruit, lanolin, white peach, quite discrete this year. The palate is well balanced, with a lovely tropical-tinged opening, from the warm summer, which is countered by the keen line of acidity. Gorgeous mouthfeel, lingering on the finish with hints of guava and lychee. Honestly, I don't think I would nail this as a pure Sauvignon Blanc blind, but absolutely delicious. Drink 2029-2042.
Lemon colour in the glass and fragrant in lemons on the nose, with a touch of verbena and fresh mint. The palate is cool, fresh and vibrant with sparks of acidity cutting through the riper fruit tones on show. The texture builds to add some cream and spice, but this is an elegant, spicy, vibrant wine. Long and refreshing.
The 2025 Pavillon Blanc, crafted entirely from Sauvignon Blanc, reveals a profile marked by confit citrus alongside notes of herbs and white fruits. Medium- to full-bodied, it’s rich and dense yet enveloping and is built around a fleshy core of fruit with notable plenitude and aromatic intensity. Bright, well-defined acidity brings balance, leading into a long, ethereal and perfumed finish. In the context of a notably dry vintage for white wines, this stands out as a clear success. Harvested between August 18 and 22, with yields of 16 hectoliters per hectare, it matured in 20% new oak, with less bâtonnage than usual, and has a pH of 3.14.
A complete sauvignon blanc with sliced pear, apple and lemon aromas and flavors with a full body and a polished texture that is caressing and beautiful. It is crunchy and a bit richer than many Pavillon Blancs.
The 2025 Pavillon Blanc is a total stunner. Tangerine peel, white peach, passion fruit and white pepper are some of the many notes that soar from the glass. The team opted for less bâtonnage than most years, as the fruit was already quite rich. Yields were just 16 hectoliters per hectare. The 2025 is an unusually exotic Pavillon Blanc, a wine with a very strong personality. I find it compelling, but I can also imagine some readers may find it a bit too rich. 2028 - 2040
