The 2025 Féniks comes from Pinotage planted in 1976 on granite soil that produces low yields of small bunches. Partial whole clusters are used so that fermentation does not start too quickly, with no punch-downs. This has a slightly more introspective bouquet with dark berry fruit, something just a little Nebbiolo-like! The palate is medium-bodied with finely chiselled tannins and a silver thread of acidity, quite sapid with a dab of Japanese wakame on the briny finish. As good a Pinotage as you will find. Drink 2028-2048.
