Something of a bargain at Restless River, this is a granite-dominated Chardonnay from younger vineyards in the Upper Hemel-en-Aarde Valley. Fermented in 10% new oak, with 60% malolactic adding to the mix, it has white flower and cinnamon aromas, layers of beeswax, aniseed and wet stone and racy, transparent finish. 2028-33.
The hand-harvested Chardonnay, grown on granite soils, was whole-bunch pressed with an old Vaslin basket press. The juice was left to settle without any additives and was kept at a consistent temperature. Spontaneous fermentation took place in 500-litre French oak barrels; aged 12 months in larger Burgundy barrels (5% new). Each plot was vinified separately. TA 7.33 g/l, pH 3.09.
Spicy golden fruit, crisp (look at the TA and the pH), tightly wound but with a creamy roundness to balance. Chewy, mouth-watering and long. Lean and long. Drink 2026-2032.
