Tasting Notes

Medium-light yellow colour; the bouquet has a lot of mealy and nutty, smoky aromas, while the palate is big and strong, round and rich, with mild acidity and a touch of toasted cashew nut to finish. A contrast with the Wallis chardonnay.

Whole-bunch pressed to small and large format oak (15% new). Spontaneous fermentation and natural malo and aged for 10 months in oak. Lacy buttery notes and creamy praline filling the crannies between fresh but also pretty lush nectarine and yellow-peach fruit. More cashmere and 'billowy' in texture, giving the wine a sense of pliancy and gentleness. But not taking anything away from its freshness and lift.
