Ferrum is a comparatively new addition to the Crystallum range, sourced, as its name suggests, from red clay soils on Shaw’s Mountain. Fermented with full malolactic – a Peter Allan Finlayson preference – this has deftly integrated 0% new oak, notes of fennel, juniper and lemongrass and a waft of vanilla spice. Drink: 2027-30
Compared with the two other Crystallum 2025 Chardonnays, the oak imprint is more prominent. The palate, however, has density of apple fruit and the oak spice is better integrated. Bright and energetic acidity and a mineral note humming away underneath keep this all in shape. Just needs a little more time for the fruit to subsume the oak. 2027-2032.
