Tasting Notes

72.4% Cabernet Sauvignon, 6.3% Merlot,4.4% Cabernet Franc, 3.6% Tannat, 2.6% Malbec, 3.1% Pinot Noir, 7.6% rare varieties. TA 3.56 g/l (sulphuric), pH 3.50.
Hints of maturing forest floor, mushroom character. Liquorice, leather, a touch of eucalypt - and maybe the famous garrigue that surrounds the vines too. Soft tannins, dark chocolate. Retains a remarkable delicacy considering preconceptions of Languedoc Cabernet - but I don't think you'd mistake it for a Bordeaux.
