Here the ripe yet cool nose evinces much more obvious Chablis character with its array of mineral reduction, iodine, floral and white orchard fruit aromas. The obvious ripeness continues onto the succulent, intense and seductively textured medium-bodied flavors where hints of salinity and minerality help to add lift to the balanced finish that is both more complex and persistent. 2018+
The 2015 Chablis Vaillons Vieilles Vignes des Minots comes from 50+ year old vines and was cropped at just 25 hectoliters per hectare. The free run juice was vinified in barrels due to the high density of the wine. It certainly has the most impressive aromatics from the three Chablis 2015s that I tasted from Verget, with greater mineralité and terroir expression. The palate is well balanced with a touch of spice on the entry, neutral in style, more a Chablis of texture than flavor, but there is nothing wrong with that. With good persistence in the mouth, this is a commendable Chablis for the vintage.
Smoky and spicy, fragrant orange blossom the nose has a complex mix. The palate has rich fruit tropical fruits and pear depth of flavour. Fresh at the back apple and lime the finish is long with flint and slate. 2018-24
A small section of vines located on the lower hillsides of the 1er Cru "Les Vaillons". The vines are over 50 years old. Yields in 2015 at 25 hl/ha. The free run juice was vinified in old barrels and lasted until late December. They were then raised in concrete tanks on the lees for 7 months. The nose to this wine is incredibly pure with lemon rind, a hint of curd and a real mineral edge. The palate shows fresh lemon character, yet a chalky texture that adds to the body of the wine. There are layers of light cream and flint on the mid palate with a crisp, structural acidity that lifts the long finish. Quintessential Chablis, with a little added power of fruit and texture.
