In recent vintages Thierry Pillot has made a small number of negociant wines, mostly from Meursault, to complement the St-Aubin and Chassagne-Montrachet whites which he makes under the label of Domaine Paul Pillot. Fine bright mid lemon yellow. Fresh gunflint nose yet with obvious fruit weight beneath. Underneath there is a richer spicier warmer note from the sunshine. Fat and fleshy then with good acidity, a bit saline too. With time this started to integrate and became fractionally my preferred wine of the pair of Porusots. Drink from 2024-2029
Nutty and slaty, with baked green apple and a touch of fresh dough too. Salty palate with high acid and a certain bitterness at first, but then the buttery note comes through and it has a long, attractive persistence. Drink: 2021-2029
