A similar but slightly riper and more restrained nose merges into textured, intense and notably more concentrated big-bodied flavors that possess ample minerality and excellent verve on the tension-filled and very serious finish. This is a fine example of the appellation.
Bright pale yellow. Captivating aromas of white peach, ginger, minerals and crushed stone. Spicy and intense, with lovely perfumed lift to the flavors of peach, white pepper and ginger. Finishes strong, tactile and long, with vibrant mineral and spice notes. Classic, energetic Chablis that combines sound acidity and full ripeness. The crop level here was just 40 hectoliters per hectare, according to Desplans. A superb sample.

40 year old vines with a South West exposure. Alcoholic fermentation was in oak with 10% new but malolactic fermentation and 10 months ageing was in concrete tanks. This wine was made from the best grapes from the Grand Cru Bougros vineyard after a severe selection process. Fantastic class and breed, this was looking to be exceptional when we tasted it in April. 250 cases to be produced.
