The 2021 Olearia Pinot Noir is spicy and sumptuous on the nose, with licorice and pomegranate pearls, layers of dark cocoa, pencil lead, hints of arnica and tapenade. For all the darkness of the descriptors, the wine is supple and fresh. Paul Pujol's tannin management scheme here consists of über gentle handling of the fruit, so the tannin that we are left with feels natural, effortless and ductile. This is the perfect example of that, and coupled with the power of the fruit and the drive of the acid, this is a balanced, harmonious and exciting wine.
